Bun Bowl  (pronounced “Boon”)    (GF)
(Vermicelli Noodle Dish)
Room temperature rice vermicelli noodles mixed with fresh herbs (basil, mint, cilantro), pickled carrots, cucumbers, bean sprouts, chopped peanuts, and choice of marinated protein (Beef, Pork, Chicken or Tofu) topped with savory sweet and sour fish sauce.
(Bun refers to the round rice noodles)

May substitute noodles with white rice.

Pho Beef   (pronounced “Fuh”)           
Pho is the beef noodle soup which is built from the bowl up: first the Pho noodles then pickled onions and then thinly sliced raw meat followed by a 5-spice beef stock ladled over last minute which cooks the meat. Fresh herb garnishes (basil, mint, cilantro), optional bean sprouts, Thai chili peppers, and limes served alongside with Hoisin sauce and Sriracha sauce to taste.

“Not Your Grandmother’s” Chicken Noodle Soup (Mien Ga)    
Broth which is made from chicken, onions, and fresh whole ginger is ladled over soy bean noodles, shredded chicken, and pickled onions. Soup is topped with fried shallots.  Fresh herb garnishes (Cilantro, mint, and Vietnamese coriander (Rau Ram), lime, and lemongrass garlic chili oil served on the side. 
(Gluten free if fried shallots left out).
